The green coffee beans are first placed into steam chambers where the outer silver skin is gently removed. This opens up the structure of the bean and prepares it for the decaffeination process.
The beans are then submerged in fresh spring water until fully saturated. This helps soften the beans and allows the caffeine molecules to become accessible for extraction.
Once saturated, the beans are introduced to naturally derived ethyl acetate from fermented sugar cane for approximately 8 hours. During this stage, the caffeine is gently dissolved and removed while preserving much of the coffee’s original flavour profile.
After decaffeination, the beans are carefully dried back to their original moisture content. This stabilises the coffee and prepares it for roasting while maintaining consistency and flavour integrity.
